So I'm not a vegan, but i do love trying new things, and I have been looking for a slightly healthy version of chocolate chip cookies without compromising flavor, so I used the recipe on the back of the nestle bag, making just a few revisions:
4 cups unbleached all purpose flour
1 tsp. baking soda
1 tsp. salt
2 sticks of butter softened
3/4 cups sugar
3/4 cups packed brown sugar
1 tsp. vanilla extract
2 tbsp ground flax seed
6 tsp. water
2 cups chocolate chips
1 cup chopped nuts
1/4 cup apple sauce
Pre-heat oven to 375
in a small bowl mix water and flax until viscous (this takes place of the eggs)
Mix flour, baking soda, salt, in small bowl. Beat butter, granulated sugar, brown sugar, and vanilla extract, in large bowl until creamy. Add Flax seed mixture a bit at a time, gradually beat in flour mixture, stir in chips and nuts. Drop rounded table spoons, onto greased baking pan cook 9-11 minutes (depending on how soft you like them). Makes about 5 dozen cookies.
